Tropical Smoothie with Mango, Pineapple

BOOM! Summer is here and it is time to refresh with smoothies. But wait, not any kind of smoothies. Healthy, dairy free smoothies. Precisely, a light, fresh and thick sweet tropical smoothie. If you never used frozen mango in smoothies you must try. That is my secret of this tropical smoothie creamy texture.  Plus, mango are deliciously sweet and when combined with pineapple. BOOM! it burst in flavor and you just travel on an island for a second. As you know dairy is not really my friend – it upset my stomach each time specially cold milk. So in this tropical smoothie recipe I use Unsweetened Almond Milk from Almond Breeze. It is not only an extraordinary dairy free milk for smoothie but it also contains few calories – perfect to stay fit and healthy this summer.

I love to add a bit of  shredded coconut and fresh pomegranate on top of this tropical smoothie. It is optional of course, but to me even the simplest recipe like this 4 ingredients smoothie must have a touch of elegance. Even more if you serve it with a pineapple and mint leave skewer!

The balance of orange, white and red colors is not only beautiful. The toasted coconut add some crunchy texture and nutty flavor and raspberry a touch of acidity that balance the sweetness of this light tropical smoothie.



Ingredients

  • 2 cup unsweetened almond milk - I used Almond Breeze Milk
  • 1 cup frozen mango
  • 1 cup fresh pineapple
  • 2 tbsp. desiccated coconut - optional

Instructions

  • In a blender place all the ingredients.
  • Blend on high speed for 1-2 minutes until smooth and thick.
