My kids devour pretzels. I always have a bag of pretzels on hand because they are a staple for both lunches and after-school snacking. Just last week, we dipped some pretzel rods in melted white chocolate and made Pretzel Snowmen out of them.
Well, yesterday I went on the hunt for another fun snack recipe using pretzels, and I found a winner on Pinterest. These Peanut Butter Pretzel Bites were originally posted by Two Tiny Kitchens, found by her on Foodaphilia. I re-worked the recipe a bit (because that’s how I roll in the kitchen) and made these incredible snacks:
CHOCOLATE & PEANUT BUTTER PRETZEL SANDWICHES
INGREDIENTS
1 cup creamy peanut butter
2 Tbsp softened butter
¾ cup powdered sugar
¾ cup brown sugar
1 bag of mini Pretzels
1 bag of semi-sweet chocolate chips or approximately 12 oz melting chocolate

CHOCOLATE & PEANUT BUTTER PRETZEL SANDWICHES
INGREDIENTS
1 cup creamy peanut butter
2 Tbsp softened butter
¾ cup powdered sugar
¾ cup brown sugar
1 bag of mini Pretzels
1 bag of semi-sweet chocolate chips or approximately 12 oz melting chocolate
INSTRUCTIONS
- Combine peanut butter and softened butter in a large bowl with a hand mixer or stand mixer.
- Add the sugars and mix to combine.
- Knead more powdered sugar into the peanut butter mixture until dough is easily rolled into balls and is no longer sticky. (I used approximately ¼ cup extra sugar, but this could vary depending on the humidity in your location)
- Using a rounded teaspoon as a guide, form small balls of the peanut butter mixture.
