Whew! It's Monday and I'm back.
It was a bit of a whirlwind weekend, but oh so fun. The husband surprised me earlier last week and basically said, "pack your bags, we're headed to Chicago".
Okay!
Now, Chicago is an easy 3 hour drive for us, so nothing earth shattering, but it was glorious to get away for 48 hours. The main event was attending a Chicago Cubs game and although they lost and it was dreadfully COLD it was a ton of fun. We ate and drank our way through the city and yes, my diet officially starts again today. If you follow me on Instagram you saw all the photos! Here's a photo of us right in front of Wrigley Stadium {before we were frozen}.
I had the BEST Chicago style deep dish pizza, some incredible barbecue {burnt ends!} and even dined on some incredible pecan pancakes while heading out of town. And of course some great coffee, beer and mixed drinks this girl could muster.
I'm still stuffed.
OVEN BAKED FRENCH ONION CHICKEN
INGREDIENTS:
- 2 cups French fried onions, crushed
- 1/2 cup Italian syle breadcrumbs
- 1 cup shredded Parmesan cheese
- 2 t. smoked paprika
- 1 t. garlic powder
- 1 t. salt
- 1 t. pepper
- 8-10 chicken breasts, slightly flattened
- 2 eggs
- 1/4 cup milk
- cooking spray
